Method
- Heat the olive oil in a 6-quart Dutch oven or soup pot over medium heat, then add the onion, carrots, celery, garlic, salt, pepper, and turmeric and cook for 6 to 8 minutes, stirring occasionally, until the vegetables begin to soften.
- Add the broth, chicken breasts, and bay leaf; bring to a boil, then reduce the heat to maintain a gentle simmer and cook for 15 to 20 minutes, until the thickest part of the chicken reaches 165°F.
- Transfer the chicken to a plate.
- Add the egg noodles to the pot and simmer for 6 to 8 minutes, or according to the package directions, until tender, while the chicken rests for 5 minutes.
- Shred the chicken with two forks.
- Return the chicken to the pot and stir in the parsley.
- Remove and discard the bay leaf.
- Serve.
Notes
For tender noodles, cook them just until tender and serve promptly. Refrigerate leftovers for 3–4 days; freeze for up to 3 months, though the noodles may soften. For a gluten-free option, use gluten-free noodles.
