Method
Toast the bread
- Heat the oven to 400°F.
- Cut the baguette on a slight diagonal into 1/2-inch slices.
- Arrange the slices in a single layer on a rimmed baking sheet.
- Brush the tops with olive oil.
- Bake for 8–10 minutes, until golden at the edges and crisp.
Cook the steak
- Pat the steak dry.
- Season both sides with the salt and pepper.
- Heat the canola oil in a 12-inch skillet over medium-high heat until shimmering.
- Sear the steak for 4–6 minutes per side, turning once, until an instant-read thermometer inserted into the thickest part reads 145°F.
- Transfer the steak to a cutting board and rest for at least 3 minutes.
- Slice thinly across the grain.
Make the horseradish cream
- Stir the sour cream, prepared horseradish, and Dijon mustard together in a small bowl.
Assemble
- Spread each crostini with horseradish cream.
- Top with arugula and sliced steak.
Notes
For tender slices, cut the steak across the grain after resting. Store the components separately in the refrigerator for up to 3 days; freezing is not recommended once assembled. Plain Greek yogurt can replace the sour cream for a lighter swap.
