Method
Brown the sausage and cook the soup
- In a 6-quart Dutch oven over medium-high heat, cook the sausage, breaking it into small pieces, for 6–8 minutes, until browned and it reaches 160°F.
- Add the onion and cook over medium heat for 4–5 minutes, stirring occasionally, until softened.
- Stir in the garlic and Italian seasoning and cook for 30 seconds, until fragrant.
- Add the salt, pepper, and chicken broth, and bring to a boil over high heat.
- Stir in the broken noodles and simmer uncovered over medium-low heat for 10–12 minutes, stirring often, until the noodles are al dente.
- Reduce the heat to low and stir in the heavy cream, Parmesan, and spinach; cook for 2–3 minutes, stirring, until the cheese melts and the spinach wilts without letting the soup boil.
Make the ricotta topping
- In a small bowl, stir together the ricotta and parsley.
- Ladle the soup into bowls.
- Add a spoonful of ricotta topping to each serving.
Notes
For the best texture, keep the soup from boiling after adding the cream. Refrigerate leftovers for up to 3 days; freezing is not recommended because the cream may separate. For a gluten-free option, use gluten-free lasagna noodles.
