Ingredients

  • 4 cups whole milk
  • 0.25 cup unsweetened cocoa powder
  • 0.33 cup granulated sugar
  • 0.125 tsp kosher salt
  • 4 oz semisweet chocolate finely chopped
  • 0.5 cup Baileys Irish Cream

Equipment

  • 1 3-quart saucepan

Method

  1. Whisk together the milk, cocoa powder, sugar, and salt in a 3-quart saucepan over medium heat for 5 to 7 minutes, until steaming and smooth; do not let it boil.
  2. Add the chopped chocolate and whisk for 1 to 2 minutes, until melted and smooth, then remove the saucepan from the heat.
  3. Stir in the Baileys and serve hot.

Notes

For the smoothest cocoa, keep the milk mixture below a boil. Refrigerate leftovers for up to 3 days and reheat gently; freezing is not recommended. For a dairy-free variation, use dairy-free milk, chocolate, and Irish cream.
