Ingredients

For the onions
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 2 yellow onions large, thinly sliced
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 1 tsp thyme fresh leaves
  • 1 tbsp balsamic vinegar
For the tart
  • 1 sheet (8 oz) puff pastry frozen, thawed; about 8 ounces
  • 4 oz goat cheese softened
  • 1 egg large
  • 1 tbsp water

Equipment

  • 1 10-inch skillet
  • 1 13x18-inch baking sheet

Method

Caramelize the onions
  1. Heat the olive oil and butter in a 10-inch skillet over medium heat.
  2. Add the onions, salt, and pepper, and cook over medium-low heat, stirring occasionally, for 30 to 35 minutes, until very soft and golden brown.
  3. Stir in the thyme and balsamic vinegar and cook for 1 minute, until the vinegar has mostly evaporated.
Assemble and bake
  1. Heat the oven to 400°F.
  2. Line a 13x18-inch baking sheet with parchment paper.
  3. Unfold the puff pastry on the baking sheet and gently roll it into an approximately 10-inch square.
  4. Score a 1/2-inch border without cutting through.
  5. Prick the center all over with a fork.
  6. Spread the goat cheese over the center of the pastry.
  7. Top evenly with the onions.
  8. Beat the egg with the water.
  9. Brush the egg mixture over the pastry border.
  10. Bake for 20 to 25 minutes, until the pastry is puffed and deep golden brown and the bottom is crisp.
  11. Let the tart rest on the baking sheet for 5 minutes.
  12. Slice and serve.

Notes

For the best texture, make sure the onions are very soft and golden brown before adding them to the pastry. Refrigerate leftovers for up to 3 days; freezing is not recommended because the pastry can lose its crispness. Use gluten-free puff pastry for a gluten-free option, if available.
