Ingredients

  • 8 cup water
  • 2 lb baby carrots
  • 4 tbsp unsalted butter
  • 0.25 cup brown sugar light, packed
  • 0.5 tsp kosher salt
  • 0.125 tsp ground cinnamon

Equipment

  • 1 6-quart pot

Method

  1. Bring the water to a boil in a 6-quart pot.
  2. Add the carrots and reduce the heat to maintain a simmer.
  3. Cook uncovered for 20 to 25 minutes, until the carrots are fork-tender.
  4. Drain the carrots and return them to the pot.
  5. Add the butter, brown sugar, salt, and cinnamon.
  6. Stir over low heat for 2 to 3 minutes, until the butter has melted and the carrots are evenly glazed.

Notes

For the best texture, cook the carrots just until fork-tender before glazing. Refrigerate leftovers in an airtight container for up to 4 days; freezing is not recommended. For a dairy-free option, use a dairy-free butter substitute.
