Ingredients

  • 0.25 cup unsweetened cocoa powder
  • 0.25 cup granulated sugar
  • 0.125 tsp kosher salt
  • 4 cups whole milk
  • 4 oz semisweet chocolate finely chopped
  • 1 tsp vanilla extract

Equipment

  • 1 2-quart saucepan

Method

  1. In a 2-quart saucepan, whisk together the cocoa powder, sugar, and salt; gradually whisk in 1/2 cup of the milk until smooth.
  2. Whisk in the remaining 3 1/2 cups milk and the chocolate.
  3. Heat over medium heat for 5 to 7 minutes, whisking often, until steaming and the chocolate is melted; do not let it boil.
  4. Remove the saucepan from the heat and stir in the vanilla extract.
  5. Divide among 4 mugs and serve hot.

Notes

Whisk the cocoa mixture smooth with the first 1/2 cup of milk before adding the rest to help prevent lumps. Refrigerate leftovers for up to 3 days; freezing is not recommended. For a dairy-free version, use an unsweetened plant-based milk.
