Ingredients

  • 1.5 lb Brussels sprouts trimmed and halved
  • 2 tbsp olive oil
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 0.5 cup Parmesan cheese finely grated

Equipment

  • 1 large rimmed baking sheet

Method

  1. Heat the oven to 425°F.
  2. Arrange a rack in the center.
  3. Toss the Brussels sprouts with the olive oil, kosher salt, and black pepper on a large rimmed baking sheet.
  4. Spread the sprouts cut side down in a single layer.
  5. Roast for 20 to 25 minutes, until the sprouts are browned on the cut sides and tender when pierced with a fork.
  6. Sprinkle the Parmesan over the sprouts.
  7. Roast for 3 to 5 minutes, until the cheese is melted and lightly golden.

Notes

For even browning, spread the sprouts cut side down in a single layer. Refrigerate leftovers for up to 4 days; freezing is not recommended because the sprouts can become soft. For a dairy-free swap, use grated dairy-free Parmesan.
