Ingredients

  • 1 tbsp neutral oil
  • 2.5 lb beef chuck roast trimmed and cut into 1 1/2-inch cubes
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 6 cloves garlic minced
  • 1 tsp Italian seasoning
  • 0.5 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 6 tbsp unsalted butter cut into pieces

Equipment

  • 1 12-inch skillet
  • 1 6-quart slow cooker

Method

  1. Pat the beef dry and season with the salt and pepper.
  2. Heat the oil in a 12-inch skillet over medium-high heat and sear the beef in batches, turning until browned on several sides, about 2 minutes per batch.
  3. Transfer the beef to a 6-quart slow cooker.
  4. Scatter the garlic and Italian seasoning over the beef.
  5. Pour in the broth and Worcestershire sauce.
  6. Arrange the butter on top, then cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours, until fork-tender and at least 145°F in the thickest pieces.
  7. Stir to coat the beef in the garlic butter cooking liquid and serve.

Notes

Sear the beef in batches so the pieces brown rather than steam. Refrigerate leftovers for up to 4 days; freezer-friendly for up to 3 months. For a dairy-free variation, use a dairy-free butter alternative.
