Method
- Heat the olive oil in a 6-quart Dutch oven over medium-high heat, then add the sausage and cook, breaking it into small pieces, until browned and it reaches 160°F, 7 to 9 minutes.
- Add the onion, carrots, celery, salt, and black pepper; cook, stirring occasionally, until the vegetables begin to soften, 5 to 7 minutes.
- Stir in the garlic, rosemary, and red pepper flakes and cook until fragrant, about 30 seconds.
- Add the tomatoes, cannellini beans, and chicken broth; bring to a boil, then reduce the heat and simmer uncovered for 15 minutes.
- Mash some of the beans against the side of the pot with a wooden spoon to thicken the soup, then stir in the kale and simmer until tender, 5 to 8 minutes.
- Ladle into bowls and top with the Parmesan cheese.
Notes
For a thicker soup, mash more beans against the side of the pot. Refrigerate leftovers for 3 to 4 days or freeze them for up to 3 months. For a vegetarian swap, use vegetable broth and omit the sausage.
