Method
Cook the bacon
- Cook the bacon in a 12-inch skillet over medium heat for 8–12 minutes, turning as needed, until crisp.
- Transfer the bacon to a paper towel-lined plate, then crumble when cool.
Make and bake the bites
- Heat the oven to 350°F.
- Line a rimmed 13x18-inch baking sheet with parchment paper.
- Arrange the saltine crackers in a single layer on the prepared sheet, fitting them closely together.
- Melt the butter, brown sugar, and maple syrup in a medium saucepan over medium heat, stirring until combined.
- Bring the caramel mixture to a boil and cook for 3 minutes, stirring constantly.
- Carefully pour the caramel over the crackers and spread it to cover them.
- Bake for 5–7 minutes, until the caramel is bubbling across the surface.
- Sprinkle the crumbled bacon over the hot caramel and gently press it in.
- Cool completely on the baking sheet until firm.
- Break into bite-size pieces.
Notes
For crisp bites, let the caramel cool completely before breaking. Store airtight at room temperature for up to 5 days; these can be frozen for up to 1 month. For a vegetarian variation, leave off the bacon topping.
