Ingredients

For the bacon topping
  • 6 bacon slices
For the cracker bites
  • 40 saltine crackers
  • 1 cup butter unsalted
  • 1 cup brown sugar packed, light
  • 2 tbsp maple syrup pure

Equipment

  • 1 12-inch skillet
  • 1 rimmed 13x18-inch baking sheet

Method

Cook the bacon
  1. Cook the bacon in a 12-inch skillet over medium heat for 8–12 minutes, turning as needed, until crisp.
  2. Transfer the bacon to a paper towel-lined plate, then crumble when cool.
Make and bake the bites
  1. Heat the oven to 350°F.
  2. Line a rimmed 13x18-inch baking sheet with parchment paper.
  3. Arrange the saltine crackers in a single layer on the prepared sheet, fitting them closely together.
  4. Melt the butter, brown sugar, and maple syrup in a medium saucepan over medium heat, stirring until combined.
  5. Bring the caramel mixture to a boil and cook for 3 minutes, stirring constantly.
  6. Carefully pour the caramel over the crackers and spread it to cover them.
  7. Bake for 5–7 minutes, until the caramel is bubbling across the surface.
  8. Sprinkle the crumbled bacon over the hot caramel and gently press it in.
  9. Cool completely on the baking sheet until firm.
  10. Break into bite-size pieces.

Notes

For crisp bites, let the caramel cool completely before breaking. Store airtight at room temperature for up to 5 days; these can be frozen for up to 1 month. For a vegetarian variation, leave off the bacon topping.
