Method
Bake the sweet potatoes
- Preheat the oven to 400°F.
- Scrub and dry the sweet potatoes, prick each several times with a fork, and rub with olive oil.
- Place the sweet potatoes on a baking sheet and bake for 45 to 60 minutes, until a fork slides easily into the center.
- Let the sweet potatoes stand for 5 minutes.
Make the BBQ chicken filling
- While the potatoes bake, stir the shredded cooked chicken and BBQ sauce together in a medium bowl.
Stuff and finish
- Split each sweet potato lengthwise, leaving the bottom intact, and fluff the flesh with a fork.
- Divide the BBQ chicken among the potatoes, top with cheddar, and bake on the same sheet for 5 to 8 minutes, until the cheese is melted.
- Sprinkle with scallions and serve hot.
Notes
For a tender center, bake until a fork slides easily into each potato. Refrigerate leftovers for 3 to 4 days; freezing is not recommended because the potatoes can become watery. Use dairy-free cheddar for a dairy-free option.
