Method
Cook the soup
- In a 6-quart Dutch oven over medium-high heat, cook the ground beef, breaking it into small pieces, for 6 to 8 minutes, until browned and it reaches 160°F; drain excess fat if needed.
- Add the onion and cook for 4 to 5 minutes, stirring occasionally, until softened.
- Add the garlic and cook for 30 seconds, stirring constantly.
- Stir in the tomato paste and cook for 1 minute.
- Add the crushed tomatoes, beef broth, Italian seasoning, salt, and pepper.
- Bring the soup to a boil over high heat.
- Stir in the broken lasagna noodles and reduce the heat to maintain a steady simmer.
- Cook uncovered for 10 to 12 minutes, stirring occasionally, until the noodles are tender.
Make the cheese topping and serve
- In a medium bowl, stir together the ricotta, mozzarella, Parmesan, and parsley.
- Ladle the soup into bowls.
- Top each serving with a spoonful of the cheese mixture.
Notes
For the best texture, cook the noodles just until tender. Refrigerate leftovers for up to 3 days; freezing is not recommended because the noodles can soften. Use gluten-free lasagna noodles for a gluten-free variation.
