Biscoff Cookie Butter Cookies

Biscoff cookie butter cookies are mixed with brown sugar and chilled before baking for soft centers and set edges. A short 30-minute chill helps the dough hold its shape in the oven.

Ingredients

  • 0.5 cup unsalted butter softened
  • 0.75 cup Biscoff cookie butter creamy
  • 0.75 cup light brown sugar packed
  • 0.25 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour spooned and leveled
  • 0.5 tsp baking soda
  • 0.5 tsp kosher salt

Equipment

  • 1 electric mixer
  • 1 large baking sheet

Method

  1. Beat the butter, cookie butter, brown sugar, and granulated sugar in a large bowl with an electric mixer on medium speed until creamy, about 2 minutes.
  2. Beat in the egg and vanilla until combined.
  3. Whisk the flour, baking soda, and salt in a medium bowl.
  4. Mix the flour mixture into the butter mixture on low speed just until no dry flour remains.
  5. Cover the dough and refrigerate for 30 minutes.
  6. Meanwhile, heat the oven to 350°F.
  7. Line a large baking sheet with parchment paper.
  8. Scoop the dough into 1 1/2-tablespoon portions and arrange them about 2 inches apart on the prepared baking sheet, working in batches if needed.
  9. Bake one batch at a time for 10–12 minutes, until the edges look set and the centers are still slightly soft.
  10. Let the cookies cool on the baking sheet for 5 minutes.
  11. Transfer the cookies to a wire rack to cool completely.
  12. Let the baking sheet cool before baking the remaining dough.

Notes

For soft centers, take the cookies out when the edges look set and the centers are still slightly soft. Store in an airtight container at room temperature for up to 5 days, or freeze for up to 3 months. For a dairy-free swap, use dairy-free butter sticks and check that the cookie butter is dairy-free.
