Method
Prepare the apple cups
- Heat the oven to 375°F.
- Grease six 8-ounce ramekins with the vegetable oil.
- Set the ramekins on an 18x13-inch rimmed baking sheet.
- In a medium bowl, toss the apples with the granulated sugar, lemon juice, cornstarch, and cinnamon.
- Divide the apple mixture evenly among the ramekins.
Make the crumble topping
- In a second medium bowl, combine the oats, flour, brown sugar, and salt.
- Work in the butter with your fingertips until coarse crumbs form.
Bake and finish
- Divide the crumble evenly over the apples.
- Bake for 30 to 35 minutes, until the topping is golden brown, the filling is bubbling, and the apples are tender when pierced with a knife.
- Let the cups rest for 10 minutes.
- Drizzle the caramel sauce over the cups.
- Serve warm.
Notes
For evenly tender apples, cut them into uniform 1/2-inch pieces. Refrigerate leftovers in a covered container for up to 4 days; freezing is not recommended because the apples can soften. For a dairy-free version, use plant-based butter and dairy-free caramel sauce.
