Bake the crust
- Heat the oven to 400°F.
- Fit the pie crust into a 9-inch pie plate and crimp the edge.
- Line the crust with parchment paper and fill it with pie weights.
- Bake for 15–18 minutes, then remove the parchment and weights.
- Bake for 8–12 minutes more, until the crust is golden brown.
- Cool the crust completely in the pie plate.
Make the filling
- In a medium bowl, whisk the egg yolks, cornstarch, salt, and 1/2 cup of the milk until smooth.
- Warm the remaining 2 cups milk in a small saucepan over medium-low heat for 3–5 minutes, until steaming but not boiling.
- Combine the sugar and water in a heavy 2- to 3-quart saucepan and bring to a boil over medium-high heat.
- Cook without stirring, swirling the pan occasionally, for 8–12 minutes, until deep amber.
- Remove the caramel from the heat and slowly whisk in the warm milk, taking care as it bubbles.
- Return the pan to low heat and stir until any hardened caramel dissolves.
- Slowly whisk about 1 cup of the hot caramel mixture into the yolk mixture.
- Whisk the tempered yolk mixture back into the saucepan.
- Cook over medium heat, whisking constantly, until the filling is thick and bubbling.
- Continue cooking for 1 minute.
- Remove the pan from the heat and whisk in the butter and vanilla extract.
- Pour the filling into the cooled crust.
- Press plastic wrap directly onto the filling’s surface and refrigerate for at least 6 hours, until fully set.
Top the pie
- Beat the heavy cream, powdered sugar, and vanilla extract in a chilled bowl until medium-stiff peaks form, about 2–4 minutes.
- Remove the plastic wrap and spread the whipped cream over the chilled pie.
- Serve.
Notes
For easier caramel incorporation, slowly whisk the warm milk into the caramel while taking care as it bubbles. Store covered in the refrigerator for up to 3 days; freezing is not recommended. For a gluten-free option, use a gluten-free 9-inch pie crust.
