Ingredients
  

Refrigerated pie crust
  • 1 refrigerated pie crust
Tomatoes
  • 3 large tomatoes slice into 1/4-inch rounds
Kosher salt
  • 0.75 tsp kosher salt divided
Cheese
  • 1 cup shredded sharp cheddar cheese
  • 0.5 cup shredded mozzarella
Mayonnaise
  • 0.5 cup mayonnaise
Fresh herbs and aromatics
  • 2 tbsp fresh basil, chopped
  • 2 green onions sliced
Black pepper
  • 0.25 tsp black pepper

Method
 

Prep the crust
  1. Preheat the oven to 375°F. Press the refrigerated pie crust into a 9-inch pie dish and prick the bottom with a fork, then blind bake for 10 minutes and let cool slightly.
Remove excess tomato moisture
  1. Lay the large tomatoes on paper towels, sprinkle with 1/2 teaspoon of the kosher salt, and let sit for 15 minutes. Pat the tomato slices dry to prevent a soggy pie.
Mix the cheesy topping
  1. Combine the shredded sharp cheddar cheese, shredded mozzarella, mayonnaise, chopped fresh basil, sliced green onions, the remaining kosher salt, and black pepper in a bowl.
Assemble and bake
  1. Arrange the tomato slices in the pie crust in an even layer. Spread the cheese mixture evenly over the tomatoes, covering completely.
  2. Bake for 30–35 minutes at 375°F, until the top is golden and bubbly. Let cool for 10 minutes before slicing.

Notes

To keep the crust crisp, thoroughly pat the tomato slices dry after drawing out moisture. Refrigerate leftovers in an airtight container for up to 3 days; the pie can be frozen for up to 1 month (best reheated in a 350°F oven). For a lighter option, use reduced-fat cheese and mayonnaise while keeping the same bake time and layering method.
