Ingredients

Chicken and broth base
  • 1.5 lb chicken breast (raw) Use boneless, skinless for quick shredding.
  • 6 cups chicken broth
  • 4 carrots Slice for even simmering.
  • 3 celery Slice for even simmering.
  • 1 onion Dice small so it dissolves into the broth.
  • 3 garlic Minced.
  • 1 packet (1 oz) ranch dressing mix
Creamy finish
  • 8 oz cream cheese Cube to melt smoothly.
  • 0.5 cup heavy cream
  • 1.5 cup shredded cheddar Use for melting into the broth.
Noodles and bacon
  • 8 oz egg noodles Cook until tender, 6-8 minutes.
  • 6 strips bacon Cook and crumble; reserve some for topping.
  • 1 green onions For garnish.
  • salt and pepper To taste.

Equipment

  • 1 Dutch oven

Method

Simmer the chicken and vegetables
  1. In a Dutch oven, bring chicken broth to a gentle simmer and add chicken breast, carrots, celery, onion, garlic, and ranch dressing mix. Simmer for 20 minutes, until the chicken is cooked through and tender.
Shred the chicken
  1. Lift the chicken from the pot, shred it with a fork, then return the shredded chicken to the broth. Stir until evenly distributed so the soup looks creamy and uniform.
Cook the egg noodles
  1. Add egg noodles to the pot and continue simmering until tender, 6-8 minutes. Keep the surface at a steady simmer so the noodles cook evenly.
Make the ranch-cheddar cream base
  1. Reduce heat to low and stir in cubed cream cheese until melted and smooth. Scrape the bottom and sides to eliminate any lumps.
Melt in cheddar and thicken
  1. Pour in heavy cream and stir, then add shredded cheddar and stir until smooth and fully melted. The broth should turn thick and glossy with a pale golden ranch color.
Season and finish with bacon
  1. Fold in most of the bacon and season with salt and pepper to taste. Taste and adjust until the flavors pop, then keep warm on low.
Serve
  1. Ladle into bowls and top with the remaining bacon, green onions, and extra cheddar. Serve immediately while the cheese is melted and the noodles are hot.

Notes

Pro tip: cube the cream cheese and keep the heat on low once it goes in—this prevents graininess and gives you a smooth, ranchy texture. Refrigerate in an airtight container for up to 3 days; reheat gently, adding a splash of broth or cream if needed. Freezing is not recommended because noodles can soften too much. If you want a lighter version, use low-fat cream cheese and half-and-half for a smaller-fat swap while keeping the creamy method.
