Ingredients

For the salmon
  • 1.5 lb salmon fillet skinless, cut into 1-inch cubes
  • 0.25 cup cornstarch
  • 0.5 tsp salt kosher
  • 0.25 tsp pepper black
  • 2 tbsp neutral oil such as avocado or canola oil
For the honey garlic sauce
  • 0.25 cup honey
  • 2 tbsp soy sauce
  • 3 cloves garlic minced
  • 1 tbsp rice vinegar

Equipment

  • 1 12-inch nonstick skillet

Method

Coat the salmon
  1. Pat the salmon dry with paper towels.
  2. Toss the salmon with the cornstarch, salt, and pepper until evenly coated.
Cook and glaze
  1. Heat 1 tablespoon of the oil in a 12-inch nonstick skillet over medium-high heat until shimmering.
  2. Cook half the salmon in a single layer, turning the pieces as they brown, until crisp on the outside and 145°F in the center, 5 to 7 minutes; transfer to a plate.
  3. Add the remaining 1 tablespoon oil and cook the remaining salmon in the same way, then transfer it to the plate.
  4. Whisk the honey, soy sauce, garlic, and rice vinegar in a small bowl.
  5. Pour the mixture into the skillet and simmer over medium heat until bubbling and slightly thickened, 1 to 2 minutes.
  6. Return the salmon to the skillet and gently toss to coat in the sauce, about 30 seconds, then serve promptly.

Notes

For the crispest salmon, cook it in a single layer without crowding the skillet. Refrigerate leftovers for up to 3 days; freezing is not recommended for the best texture. Use tamari instead of soy sauce for a gluten-free option.
