Method
Preheat the oven
- Heat the oven to 450°F with a rack in the center position.
Prepare the eggs
- Bring 4 cups water to a boil in a 2-quart saucepan.
- Gently lower in the eggs and simmer for 7 minutes.
- Put the ice and 4 cups cold water in a bowl.
- Transfer the eggs to the ice bath and chill for 5 minutes.
- Peel the eggs and set aside.
Cook the bacon
- Cook the bacon in a 12-inch skillet over medium heat, turning occasionally, for 8–12 minutes until crisp.
- Transfer the bacon to a paper towel-lined plate.
- Crumble the bacon once cool.
Boil and roast the potatoes
- Put the potatoes, 8 cups water, 1 tablespoon kosher salt, and baking soda in a 5-quart pot.
- Bring to a boil and cook for 8–10 minutes until the edges are tender but the centers are still firm.
- Drain the potatoes and let them steam-dry in the colander for 2 minutes.
- Return the potatoes to the pot and shake until the edges are rough.
- Toss the potatoes with the olive oil, remaining 1 teaspoon kosher salt, and black pepper.
- Spread the potatoes in a single layer on a large rimmed baking sheet.
- Roast for 35–45 minutes, turning once after 20 minutes, until deeply golden and crisp.
Serve
- Divide the potatoes among plates and top with the crumbled bacon and sliced scallions.
- Serve with the peeled eggs.
Notes
For the crispiest edges, let the potatoes steam-dry for the full 2 minutes before shaking them in the pot. Refrigerate leftovers in separate airtight containers for up to 3 days; freezing is not recommended because the eggs and potatoes can lose their texture. Turkey bacon can replace pork bacon if preferred.
