Ingredients

  • 3 lb sweet potatoes peeled and cut into 1-inch cubes
  • 0.33 cup pure maple syrup
  • 0.25 cup light brown sugar packed
  • 4 tbsp unsalted butter cut into small pieces
  • 0.5 tsp ground cinnamon
  • 0.25 tsp table salt

Equipment

  • 1 6-quart slow cooker

Method

  1. Put the sweet potatoes in a 6-quart slow cooker and add the maple syrup, brown sugar, butter, cinnamon, and salt; toss to coat.
  2. Cover and cook on LOW for 4 to 5 hours or HIGH for 2 to 3 hours, stirring once halfway through, until the sweet potatoes are fork-tender.
  3. Turn off the slow cooker, uncover, and let the potatoes rest for 10 minutes.
  4. Stir gently to coat the potatoes with the glaze before serving.

Notes

For an even glaze, stir gently before serving so the tender sweet potatoes stay intact. Refrigerate leftovers for up to 4 days; freeze for up to 2 months. For a dairy-free option, use dairy-free butter.
