Ingredients

  • 1 cooking spray nonstick
  • 1 yellow onion small, finely chopped
  • 2 lb boneless, skinless chicken breasts thawed
  • 2 can (10 oz) red enchilada sauce
  • 1 tsp chili powder
  • 0.5 tsp ground cumin
  • 0.5 tsp salt
  • 1 can (15 oz) black beans drained and rinsed
  • 1 can (15 oz) corn drained
  • 12 corn tortillas cut into 1-inch strips
  • 2 cup shredded Mexican-blend cheese

Equipment

  • 1 6-quart slow cooker

Method

  1. Lightly coat the inside of a 6-quart slow cooker with nonstick cooking spray.
  2. Add the onion to the slow cooker.
  3. Arrange the chicken on top of the onion.
  4. Pour over the enchilada sauce.
  5. Sprinkle with the chili powder, cumin, and salt.
  6. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until the thickest chicken breast reaches 165°F.
  7. Shred the chicken in the slow cooker with two forks.
  8. Stir in the black beans and corn.
  9. Layer one-third of the tortilla strips, one-third of the chicken mixture, and one-third of the cheese in the slow cooker.
  10. Repeat these layers twice, finishing with cheese.
  11. Cover and cook on HIGH for 30–45 minutes, until the tortillas are tender and the cheese is melted.
  12. Turn off the slow cooker.
  13. Uncover the slow cooker.
  14. Let the casserole rest for 10 minutes before serving.

Notes

For the best texture, keep the tortilla strips layered rather than stirring them in. Refrigerate leftovers for up to 3–4 days; freeze for up to 3 months. For a dairy-free option, use dairy-free shredded cheese.
