  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 0.67 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 0.5 tsp fine salt
  • 8 oz dark chocolate 60% to 70% cacao, chopped

  • 1 electric mixer

Method

  1. Heat the oven to 350°F.
  2. Line an 18x13-inch baking sheet with parchment paper.
  3. Beat the softened butter and packed light brown sugar in a large bowl with an electric mixer on medium speed until creamy, about 2 minutes.
  4. Beat in the eggs one at a time.
  5. Mix in the vanilla extract until combined.
  6. Whisk the flour, cocoa powder, baking soda, and salt in a medium bowl.
  7. Mix the dry ingredients into the butter mixture on low speed just until no dry streaks remain.
  8. Fold in the chopped dark chocolate.
  9. Cover the dough and refrigerate for 1 hour.
  10. Scoop the dough into 2-tablespoon portions and place them about 2 inches apart on the prepared baking sheet.
  11. Bake in batches for 10 to 12 minutes, until the edges are set and the centers still look soft.
  12. Cool the cookies on the baking sheet for 5 minutes.
  13. Transfer the cookies to a wire rack to cool completely.
  14. Let the baking sheet cool before baking the next batch.

Notes

For soft centers, take the cookies out when the edges are set but the centers still look soft. Store in the refrigerator for up to 4 days; freeze for up to 3 months. For a dairy-free variation, use plant-based butter and dairy-free dark chocolate.
