Ingredients

  • 1 lb potatoes Yukon Gold, cut into 1/2-inch cubes
  • 2 qt water
  • 1.5 tsp salt kosher, divided
  • 1 tbsp vegetable oil
  • 1 tbsp butter unsalted
  • 0.5 cup onion yellow, finely diced
  • 0.25 tsp paprika
  • 0.25 tsp black pepper

Equipment

  • 1 12-inch skillet

Method

  1. Bring the water and 1 teaspoon salt to a boil in a medium saucepan over high heat.
  2. Add the potatoes and cook for 5–7 minutes, until a knife meets slight resistance.
  3. Drain the potatoes well and let them sit in the colander for 5 minutes to steam-dry.
  4. Heat the oil and butter in a 12-inch skillet over medium-high heat.
  5. Add the potatoes in an even layer and cook for 10–14 minutes, turning every few minutes, until golden and crisp on several sides.
  6. Add the onion and cook for 4–5 minutes, stirring occasionally, until softened and lightly browned.
  7. Stir in the paprika, black pepper, and remaining 1/2 teaspoon salt.
  8. Serve hot.

Notes

For crispier potatoes, drain them well and let them steam-dry for the full 5 minutes before frying. Refrigerate leftovers for up to 4 days; freezing is not recommended. For a dairy-free version, replace the butter with additional vegetable oil.
