Honey Roasted Sweet Potatoes

Honey roasted sweet potatoes are coated with olive oil, cinnamon, and black pepper, then roasted until fork-tender with browned edges. A drizzle of honey in the final minutes gives the cubes a lightly sticky glaze.

Ingredients

  • 2 lb sweet potatoes peeled and cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 0.5 tsp cinnamon ground
  • 0.25 tsp black pepper ground
  • 3 tbsp honey

Equipment

  • 1 large rimmed baking sheet

Method

  1. Preheat the oven to 425°F.
  2. Line a large rimmed baking sheet with parchment paper.
  3. Toss the sweet potatoes with the olive oil, kosher salt, cinnamon, and black pepper.
  4. Spread the sweet potatoes in a single layer on the baking sheet.
  5. Roast for 20 minutes.
  6. Drizzle with honey and toss to coat.
  7. Spread the potatoes back into a single layer.
  8. Roast for 10 to 15 minutes, until fork-tender and browned at the edges.

Notes

For even browning, cut the sweet potatoes into uniform 1-inch cubes and spread them in a single layer. Refrigerate leftovers in an airtight container for up to 4 days; freeze for up to 3 months. For a vegan variation, use maple syrup instead of honey.
