Ingredients

For the fudge
  • 1 tbsp unsalted butter softened
  • 1 can (14 oz) sweetened condensed milk
  • 2 tbsp unsweetened cocoa powder
  • 0.25 tsp kosher salt
  • 1.5 cup milk chocolate chips 9 ounces
  • 1.5 cup semisweet chocolate chips 9 ounces
  • 1 tsp vanilla extract
For the topping
  • 1.5 cup mini marshmallows

Equipment

  • 1 8-inch square pan

Method

Prepare the pan
  1. Line an 8-inch square pan with parchment paper, leaving some overhang.
  2. Grease the paper and sides of the pan with the butter.
Make the fudge
  1. Whisk together the sweetened condensed milk, cocoa powder, and salt in a medium saucepan over low heat until smooth and hot, 2 to 3 minutes; do not let it simmer.
  2. Add the milk chocolate chips and semisweet chocolate chips, stirring constantly until melted and smooth, 3 to 5 minutes.
  3. Remove the pan from the heat.
  4. Stir in the vanilla.
  5. Spread the fudge evenly in the prepared pan.
Top and chill
  1. Scatter the mini marshmallows over the fudge.
  2. Gently press the mini marshmallows into the surface.
  3. Refrigerate until firm, at least 3 hours.
  4. Let stand at room temperature for 10 minutes.
  5. Lift the fudge out with the parchment and cut into 36 pieces.

Notes

For clean cuts, use the parchment overhang to lift the fully chilled fudge from the pan. Store in an airtight container in the refrigerator for up to 1 week; freeze for up to 2 months. For a dairy-free option, use dairy-free chocolate chips and dairy-free sweetened condensed milk.
