Ingredients

Chicken
  • 1.5 lb chicken breast or thighs
Vegetables and aromatics
  • 4 carrots, sliced
  • 3 celery, sliced
  • 1 onion, diced
  • 6 garlic, minced
  • 2 tbsp fresh ginger, grated
  • 2 cup shiitake or cremini mushrooms, sliced
  • 2 cup kale or spinach, chopped
Broth and seasonings
  • 8 cup chicken broth
  • 1 tsp turmeric
  • 1 tsp dried thyme
  • 0.25 tsp black pepper (activates turmeric)
  • 1 tbsp lemon juice
  • 1 Salt to taste
Noodles and serving
  • 8 oz egg noodles
  • 1 Fresh parsley and lemon for serving

Equipment

  • 1 Dutch oven

Method

Simmer the chicken soup base
  1. Bring chicken broth to a simmer in a Dutch oven, then add chicken, carrots, celery, onion, garlic, ginger, turmeric, dried thyme, and black pepper. Maintain a gentle simmer at 200°F-210°F for 20 minutes, until the chicken is cooked through and the vegetables begin to soften.
Shred and add mushrooms
  1. Remove the chicken, shred it, then return it to the pot. Keep the soup at a gentle simmer so the broth stays hot and lightly bubbling (200°F-210°F).
  2. Add sliced mushrooms to the pot and cook for 5 minutes. Watch for a tender, lightly browned look and a richer mushroom aroma.
Cook noodles and wilt greens
  1. Stir in egg noodles and cook for 6-8 minutes until tender. Keep the liquid at a steady simmer and look for noodles that are fully softened but not mushy.
  2. Stir in chopped kale or spinach and lemon juice, then cook for 3 minutes until the kale is wilted. The greens should turn bright and tender while the broth stays warm and steamy.
Season and serve
  1. Season the soup with salt to taste. Taste and adjust until the broth is balanced, then serve with fresh parsley and lemon wedges.

Notes

For the best texture, keep the soup at a gentle simmer once the chicken is in—boiling hard can make noodles break and leaves the broth cloudy. Store in an airtight container in the fridge for up to 4 days; noodles may soften further on standing. Freezing is okay for the broth and chicken (up to 2 months), but cook noodles separately if you plan to freeze for best results. For a gluten-free swap, use gluten-free egg noodles and follow the package cook time.
