Ingredients

For the candied bacon
  • 8 slices bacon thick-cut
  • 2 tbsp light brown sugar packed
  • 0.5 tsp black pepper
  • 0.125 tsp cayenne pepper
For the goat cheese log
  • 1 package (8 oz) goat cheese softened
  • 1 package (4 oz) cream cheese softened
  • 1 tbsp maple syrup
For serving
  • 1 box (8 oz) crackers

Equipment

  • 1 rimmed baking sheet

Method

Make the candied bacon
  1. Heat the oven to 375°F and line a rimmed baking sheet with foil; set a wire rack on the sheet.
  2. Stir the brown sugar, black pepper, and cayenne together, then arrange the bacon on the rack and press the sugar mixture evenly onto the top of each slice.
  3. Bake for 25–30 minutes, until the bacon is deeply browned and crisp, then cool completely on the rack and finely chop.
Make and serve the goat cheese log
  1. Mix the goat cheese, cream cheese, and maple syrup in a medium bowl until smooth.
  2. Shape the mixture into a log about 7 inches long on a piece of parchment, cover, and refrigerate for 20 minutes to firm.
  3. Press the chopped bacon over the log to coat it, then refrigerate for at least 30 minutes before serving with the crackers.

Notes

Let the candied bacon cool completely before chopping so it stays crisp. Store the assembled log covered in the refrigerator for up to 3 days; freezing is not recommended because it can affect the cheese texture. For a gluten-free option, serve with gluten-free crackers.
