Ingredients

  • 2 lb sweet potatoes peeled and cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper
  • 0.5 cup Parmesan cheese finely grated

Equipment

  • 1 18x13-inch rimmed baking sheet

Method

  1. Heat the oven to 425°F and line an 18x13-inch rimmed baking sheet with parchment paper.
  2. Toss the sweet potatoes with the olive oil, Italian seasoning, salt, and pepper in a large bowl, then spread them in a single layer on the prepared baking sheet.
  3. Roast for 20 minutes, then turn the potatoes and sprinkle them evenly with the Parmesan.
  4. Roast for another 10 to 15 minutes, until the potatoes are tender when pierced with a fork and browned at the edges.

Notes

For even browning, spread the sweet potatoes in a single layer without crowding the pan. Refrigerate leftovers for up to 4 days; freezing is not recommended because the potatoes can soften. For a dairy-free option, use a dairy-free Parmesan-style cheese.
