Ingredients

For the centers
  • 1 cup peanut butter creamy
  • 4 tbsp unsalted butter softened
  • 1 tsp vanilla extract
  • 0.25 tsp salt
  • 3 cups powdered sugar
For the coating
  • 1 bag (12 oz) white chocolate chips
  • 1 tbsp vegetable shortening

Equipment

  • 1 rimmed baking sheet
  • 1 microwave-safe bowl

Method

Make the centers
  1. Line a rimmed baking sheet with parchment paper.
  2. In a large bowl, mix the creamy peanut butter, softened unsalted butter, vanilla extract, and salt until smooth, then gradually mix in the powdered sugar until a firm dough forms.
  3. Scoop the dough into 36 portions, about 1 tablespoon each, and roll them into balls.
  4. Arrange the balls on the baking sheet and refrigerate for 30 minutes, until firm.
Coat the snowballs
  1. Put the white chocolate chips and vegetable shortening in a small, deep microwave-safe bowl.
  2. Microwave at 50% power in 20-second bursts, stirring between each, for 1 to 2 minutes total, until smooth.
  3. Dip each chilled ball in the melted chocolate, let the excess drip back into the bowl, and return it to the baking sheet.
  4. Refrigerate for 20 minutes, until the coating is set.

Notes

Chill the centers until firm before dipping to make them easier to handle. Store covered in the refrigerator for up to 7 days; these freeze well. For a dairy-free version, use dairy-free butter and white chocolate chips.
