Method
Make the nougat
- In a large bowl, stir together the marshmallow creme, butter, vanilla, and salt until smooth.
- Stir in the powdered sugar, 1/2 cup at a time, until a stiff dough forms, then knead briefly until smooth.
- Divide the dough in half and shape each half into an 8-inch log.
- Place the logs on a parchment-lined baking sheet and refrigerate for 30 minutes, until firm.
Melt the caramel
- Set a heatproof bowl over a small saucepan of gently simmering water, add the caramels and heavy cream, and stir for 5 to 8 minutes until smooth.
- Keep the bowl over the warm water while coating the logs.
Coat and finish the logs
- Spread the pecans in a shallow dish.
- Working with one chilled log at a time, spread caramel over all sides with an offset spatula, then roll and press in the pecans until coated; repeat with the second log.
- Refrigerate the logs for 30 minutes, until the caramel is set.
- Slice each log into 12 pieces.
Notes
For neat slices, make sure the logs are firm before cutting. Store airtight in the refrigerator for up to 14 days; freeze for up to 2 months. For a different nut coating, use finely chopped walnuts in place of pecans.
