Ingredients

  • 4 cups whole milk
  • 0.5 cup pumpkin puree
  • 1 tsp pumpkin pie spice
  • 1 pinch salt
  • 6 oz white chocolate chips
  • 1 tsp vanilla extract

Equipment

  • 1 3-quart saucepan

Method

  1. In a 3-quart saucepan, whisk together the milk, pumpkin puree, pumpkin pie spice, and salt until smooth.
  2. Set the pan over medium-low heat and cook for 5 to 7 minutes, whisking occasionally, until steaming with small bubbles at the edges; do not let it boil.
  3. Remove the pan from the heat.
  4. Add the white chocolate chips and whisk for 1 to 2 minutes until fully melted and smooth.
  5. Whisk in the vanilla extract.
  6. Serve hot.

Notes

For the smoothest drink, whisk until the white chocolate is fully melted. Refrigerate leftovers for up to 3 days; freezing is not recommended. For a dairy-free variation, use oat milk and dairy-free white chocolate chips.
