Ingredients

Rotisserie chicken soup base
  • 1 rotisserie chicken, skin removed, meat pulled and shredded
  • 4 carrots, sliced
  • 4 celery, sliced
  • 1 onion, diced
  • 4 garlic, minced
  • 8 cup chicken broth
  • 2 tbsp olive oil or butter
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 0.5 tsp garlic powder
  • 8 oz egg noodles
  • salt and pepper to taste
  • fresh parsley for garnish

Equipment

  • 1 Dutch oven

Method

Sauté the vegetables
  1. Heat olive oil or butter in a large pot over medium heat and sauté the onion, carrots, and celery for 5 minutes until the onion softens and the carrots start to tenderize.
  2. Add the minced garlic and cook for 1 minute, stirring, until fragrant but not browned.
Build the soup
  1. Pour in the chicken broth, then stir in dried thyme, dried parsley, and garlic powder.
  2. Bring the mixture to a boil, then add the pulled rotisserie chicken and stir to combine.
  3. Simmer for 10 minutes to let the broth develop flavor.
Cook the noodles and finish
  1. Add the egg noodles and cook for 6-8 minutes until tender, stirring occasionally so they don’t stick.
  2. Season generously with salt and pepper to taste, then garnish with fresh parsley before serving.

Notes

For best texture, add the egg noodles during the final simmer so they stay tender (not mushy). Store leftovers in the refrigerator up to 3 days; the soup thickens as noodles absorb broth. Freezing is not recommended because egg noodles can soften excessively after thawing. If you want a lighter option, swap olive oil for butter- or broth-based cooking with a reduced amount of added fat.
