Ingredients

For the date mixture
  • 0.5 cup unsalted butter
  • 1 cup granulated sugar
  • 1 cup dates chopped, pitted
  • 1 egg large, beaten
  • 1 tsp vanilla extract
  • 2 cup crisp rice cereal
For the coating
  • 1 cup coconut sweetened, shredded

Equipment

  • 1 2-quart saucepan

Method

Cook the date mixture
  1. In a 2-quart saucepan over medium-low heat, combine the butter, sugar, dates, and beaten egg, stirring constantly for 6 to 8 minutes until the mixture thickens and reaches 160°F.
  2. Remove the pan from the heat, stir in the vanilla and crisp rice cereal, and let the mixture cool for 5 minutes.
Shape and coat
  1. Spread the coconut in a shallow bowl.
  2. Scoop about 1 tablespoon of the mixture at a time and roll into balls.
  3. Coat each ball in coconut.
  4. Arrange the balls on a parchment-lined baking sheet and refrigerate for 30 minutes, until firm.

Notes

Stir constantly while cooking so the date mixture heats evenly. Store covered in the refrigerator for up to 5 days; freeze for up to 2 months. For a dairy-free version, use plant-based butter.
