Ingredients

  • 2 lb beef chuck roast boneless, trimmed and cut into 1 1/2-inch cubes
  • 1 tsp kosher salt
  • 0.5 tsp black pepper
  • 1 tbsp olive oil
  • 1.5 lb baby gold potatoes scrubbed and halved if larger than 1 1/2 inches
  • 1 cup low-sodium beef broth
  • 1 tbsp Worcestershire sauce
  • 6 tbsp unsalted butter cut into pieces
  • 6 cloves garlic minced
  • 1 tsp dried thyme

Equipment

  • 1 12-inch skillet
  • 1 6-quart slow cooker

Method

  1. Toss the beef with the salt and pepper to season it evenly.
  2. Heat the olive oil in a 12-inch skillet over medium-high heat. Sear the beef in batches for 2 to 3 minutes per side, until browned, then transfer it to a 6-quart slow cooker.
  3. Add the potatoes to the slow cooker, arranging them around and under the beef. Pour in the beef broth and Worcestershire sauce, then scatter the butter, garlic, and thyme over the top.
  4. Cover and cook on LOW for 7 to 8 hours or HIGH for 4 to 5 hours, until the beef is fork-tender and the potatoes are easily pierced with a fork.
  5. Turn off the slow cooker and gently stir to coat the beef and potatoes in the garlic butter juices. Let rest, covered, for 10 minutes before serving.

Notes

For the deepest flavor, brown the beef in batches without crowding the skillet. Refrigerate leftovers for 3 to 4 days; freeze for up to 3 months. For a dairy-free version, use a dairy-free butter substitute.
