Ingredients

For the chicken
  • 2 lb chicken thighs boneless, skinless, thawed
For the sauce
  • 0.33 cup honey
  • 0.33 cup soy sauce low-sodium
  • 0.25 cup ketchup
  • 4 cloves garlic minced
  • 1 tbsp rice vinegar
For thickening the sauce
  • 1 tbsp cornstarch
  • 1 tbsp water cold

Equipment

  • 1 6-quart slow cooker

Method

Prepare the slow cooker
  1. Arrange the chicken thighs in a 6-quart slow cooker.
  2. Whisk the honey, soy sauce, ketchup, garlic, and rice vinegar in a bowl.
  3. Pour the mixture over the chicken.
Cook the chicken
  1. Cover and cook on LOW for 4 to 5 hours or HIGH for 2 to 3 hours, until the thickest thigh reaches 165°F.
  2. Transfer the chicken to a plate.
  3. Cover loosely to keep warm.
Thicken the sauce
  1. Pour the cooking liquid into a small saucepan.
  2. Bring it to a simmer over medium heat.
  3. Whisk the cornstarch and cold water together in a small bowl.
  4. Whisk the slurry into the simmering sauce.
  5. Simmer, stirring, for 1 to 2 minutes, until the sauce is glossy and thickened.
  6. Serve the chicken with the thickened sauce.

Notes

For the glossiest sauce, whisk the cornstarch and cold water until smooth before adding the slurry. Refrigerate leftovers for 3 to 4 days or freeze them; use gluten-free tamari in place of the soy sauce if needed.
