Prep the pan and heat oven
- Preheat the oven to 350°F and grease a 9x5-inch loaf pan so the bread releases cleanly after baking.
Mix dry ingredients

Mix wet ingredients and zucchini
- In a separate bowl, whisk the eggs, granulated sugar, vegetable oil, and vanilla extract until smooth.
- Fold in the shredded zucchini (squeezed dry) until evenly distributed throughout the batter.
Combine batter

Add topping and bake
