Preheat and prepare the dish
- Preheat the oven to 350°F. Place the butter in a 9x13-inch baking dish and melt it in the oven as it preheats, until fully melted.
Mix the batter
- In a bowl, whisk together the flour, 1/2 cup sugar, baking powder, and salt. Stir in the milk just until combined, leaving the batter thick.
Layer batter and peaches
- Pour the batter over the melted butter in the baking dish, and do not stir. Spread it into an even layer without mixing into the butter.
- Toss the peaches with the remaining sugar, cinnamon, and lemon juice. Spoon the peach mixture evenly over the batter so the fruit sits on top.
Bake
- Bake for 45–50 minutes at 350°F, until the top is golden and bubbling. The edges should look set while the center shows active bubbling from the juices.
Cool and serve
- Let the cobbler cool for 10 minutes before serving warm. Serve warm, ideally with a scoop of vanilla ice cream.
