Prep
- Preheat the oven to 350°F and grease a small baking dish.
Mix the batter
- Whisk together the oats, protein powder, baking powder, and salt.
- Whisk the egg, milk, honey or maple syrup, and vanilla extract, then pour into the dry ingredients and stir until combined.
Swirl and fill
- Pour half the batter into the baking dish, drop spoonfuls of strawberry jam on top, then swirl gently.
- Pour the remaining batter over top.
Bake
- Bake for 20–22 minutes, until the center is set.
Glaze and serve
- Let cool slightly, then drizzle with the powdered sugar glaze and top with sprinkles before serving.
Notes
For the cleanest jam swirl, place the jam in small spoonfuls and swirl with a light touch so it streaks instead of fully mixing in. Store leftovers in the refrigerator up to 3 days; rewarm gently in the microwave or enjoy cold. Freezing isn’t recommended because the jam texture can soften after thawing. Dietary swap: use a plant-based protein powder and milk alternative (like oat or soy) for an easy dairy-free version.
