Sugar free hot chocolate comes together on the stovetop with cocoa, almond milk, and a touch of vanilla. Whisking the cocoa with a little milk first makes a smooth, steaming drink without boiling it.

Ingredients

  • 2 tbsp granulated 1:1 sugar-free sweetener
  • 2 tbsp unsweetened cocoa powder
  • 1 pinch salt
  • 2 cups unsweetened almond milk
  • 0.5 tsp vanilla extract

Method

  1. In a small saucepan, whisk together the sweetener, cocoa powder, and salt with about 1/4 cup of the almond milk until smooth.
  2. Whisk in the remaining almond milk.
  3. Heat over medium heat, stirring often, until steaming, 4 to 6 minutes; do not let it boil.
  4. Remove from the heat and stir in the vanilla extract.

Notes

Whisk the cocoa with a little almond milk first to help prevent lumps. Refrigerate leftovers for up to 3 days; freezing is not recommended. For a nut-free option, use unsweetened soy milk.
