Method
Coat the salmon
- Pat the salmon dry with paper towels.
- Toss the salmon with the cornstarch, salt, and pepper until evenly coated.
Cook and glaze
- Heat 1 tablespoon of the oil in a 12-inch nonstick skillet over medium-high heat until shimmering.
- Cook half the salmon in a single layer, turning the pieces as they brown, until crisp on the outside and 145°F in the center, 5 to 7 minutes; transfer to a plate.
- Add the remaining 1 tablespoon oil and cook the remaining salmon in the same way, then transfer it to the plate.
- Whisk the honey, soy sauce, garlic, and rice vinegar in a small bowl.
- Pour the mixture into the skillet and simmer over medium heat until bubbling and slightly thickened, 1 to 2 minutes.
- Return the salmon to the skillet and gently toss to coat in the sauce, about 30 seconds, then serve promptly.
Notes
For the crispest salmon, cook it in a single layer without crowding the skillet. Refrigerate leftovers for up to 3 days; freezing is not recommended for the best texture. Use tamari instead of soy sauce for a gluten-free option.
