Ingredients

Soup
  • 2 lb bone-in chicken thighs Use bone-in for the richest broth.
  • 4 carrots, sliced
  • 4 celery, sliced
  • 1 onion, diced
  • 8 cloves garlic, minced
  • 2 tbsp fresh ginger, grated
  • 8 cup chicken broth
  • 1 tsp turmeric
  • 1 tsp dried thyme
  • 0.25 tsp black pepper
  • 0.25 tsp cayenne
  • 2 cup kale or spinach, chopped Kale or spinach both work—use what you have.
  • 1 tbsp lemon juice
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey
  • 8 oz egg noodles
  • 1 salt to taste
  • 1 fresh parsley and lemon for serving Serve with extra lemon wedges and chopped parsley.

Equipment

  • 1 Dutch oven

Method

Build the broth
  1. Combine bone-in chicken thighs, carrots, celery, onion, garlic, ginger, chicken broth, turmeric, dried thyme, black pepper, and cayenne in a large pot. Bring to a boil over high heat, then lower to a gentle simmer.
  2. Simmer for 30 minutes until the chicken is very tender. Keep the liquid at a steady simmer for the clearest broth.
Shred and finish the soup
  1. Remove the chicken, shred the meat, and discard bones and skin. Return the shredded chicken to the pot.
  2. Add egg noodles and simmer for 6-8 minutes until tender. Stir occasionally so the noodles don’t stick.
  3. Stir in kale and cook for 3 minutes until wilted. Keep heat at a simmer so the greens stay vibrant.
Season and serve
  1. Stir in lemon juice, apple cider vinegar, and honey, then season with salt to taste. Taste and adjust salt before serving.
  2. Serve hot with extra lemon wedges and fresh parsley. Spoon broth over noodles for an even turmeric-ginger color in every bowl.

Notes

For the best texture, shred the chicken while it’s still warm so it pulls easily, then return it promptly to keep the soup hot. Store leftovers in an airtight container in the refrigerator up to 3-4 days; reheat gently on the stove. Freezing is not recommended because egg noodles can turn soft, but you can freeze the broth without noodles and stir in fresh noodles later. For a dairy-free option, the recipe is naturally dairy-free; for a lower-sugar swap, replace honey with maple syrup or omit if you prefer.
