Ingredients

Salad
  • 4 cup watermelon
  • 1.5 cup blueberries
  • 8 oz feta cheese
  • 0.25 cup fresh mint leaves
Dressing
  • 3 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 0.25 tsp flaky sea salt

Method

Assemble the salad
  1. Arrange the watermelon cubes and blueberries on a large serving platter.
  2. Scatter the crumbled feta evenly over the fruit.
  3. Top with fresh mint leaves and flaky sea salt.
Mix and dress
  1. Whisk together the olive oil, lime juice, and honey in a small bowl until smooth and combined.
  2. Drizzle the dressing evenly over the salad.
  3. Serve immediately for the best texture and flavor.

Notes

For the most crisp fruit texture, cube the watermelon right before assembling and serve within a few minutes. Refrigerate leftovers in a sealed container up to 1 day, but note the watermelon will release more juice. Freezing is not recommended. Dietary swap: use dairy-free feta (or a feta-style plant-based crumble) for a lactose-free version.
